INGREDIENTS
1/2 Onion Diced small
2 cloves of garlic minced
3/4ths teaspoon of salt
2 cups of cooked green or brown lentils
2 cups of water
8 ounces of spaghetti
1 jar (25 oz.) of vegan marinara sauce
DIRECTIONS
Press the sauté button on the Instant Pot
When hot, add onion, garlic and a little water to sauté
Cook, stirring for about 3 minutes until the onion becomes translucent then add salt and cooked lentils. Stir then turn off the heat.
Pour the water in and using a spatula, de-glaze the bottom of the pan to get any stuck bits off the bottom. Add spaghetti noodles, broken in half. Then pour the marinara on top of the noodles and push the noodles so they are totally covered in liquid. Do not stir.
Place lid on the Instant Pot and set to 9 minutes on high pressure
As soon as the timer goes off indicating that it is finished, do a quick release so the pasta does not over cook. Stir everything together then serve.
Side Note: Cooked lentils: 1 cup of uncooked lentils. 3 cups of water. Bring to a boil and then simmer for 30 minutes. Drain then continue with the recipe.
