Tofu Veggie Fried Rice

INGREDIENTS

1 pack of firm tofu

1/2 teaspoon of pepper

1/2 teaspoon of onion powder

1/2 teaspoon of garlic powder

3 Bell Peppers diced (any color)

1 large Onion diced

4 Celery sticks chopped

1 can of pineapple chunks

1/2 cup of raw cashews

8 ounces of Mushroom sliced

Sweet chili sauce 1/4th of a cup

Low Sodium Soy Sauce 3 -5 tablespoons (to taste)

Brown Rice (cooked ahead of time)

Delicious Veggies with tofu that “taste like chicken”

DIRECTIONS

Cook Brown rice and set aside

Warm a skillet and either slice or break off pieces of the tofu into the skillet. Keep the heat on low. Add pepper, onion powder and garlic powder. Stir occasionally to prevent sticking and burning. This helps tofu to cook evenly. Cooking this slowly on low heat and stirring every few minutes is the key. After 30 minutes, should be cooked.

While tofu is cooking, dice peppers, onion mushroom and celery. Place in a separate pan on medium heat and sauté with water. This will cook in about 15-20 minutes as the tofu is cooking.

After brown rice, veggies and tofu have cooked, add all three together in one pan and add sweet chili sauce, low sodium soy sauce, cashews and pineapple chunks. Heat for a couple of minutes and serve

NOTES

If you break apart the tofu in small chunks (vs. slicing it), it looks (and tastes) a lot like chicken!
